If you are feeling a little hesitant and overwhelmed, don’t worry! I will continue to be sharing my favourite recipes and health tips for summer that help me feel energized,confident and in shape. Yes, confident as well, because what you put into your body makes a huge impact about how you feel about your body. Here are one of my favourite summer recipes, my Slimming Chickpea Summer Salad!
If you binged out on a bunch of crap this weekend, then chances are you are not feeling all that good and probably feeling heavy, bloated and self conscious. Therefore by eating the right foods, all that negativity can be turned around to make sure you feel light, tight and self assured!
What you will notice in this amazing recipe is that no food groups are left out which means it is super healthy and complete. This proves you can get amazing results without having to eliminate carbs, fats or protein. And just to confirm, there is more than enough plant protein in this gorgeous salad of colour!!! Plus, with all the fibre and water in this salad, it will help detox and remove any junk still left in your system from the weekend that passed 😉
This salad takes 15 min to prepare and makes 3-4 servings. TIP: make it the night before and take the rest for lunch at work!
Here is the recipe to my SLIMMING CHICKPEA SUMMER SALAD
- 1 can chickpeas (or 1 cup cooked chickpeas)1 cup purple globe grapes (tip: KEEP THE PIPS IN, they have incredible health benefits including anti-cancer properties!!!)1/2 medium red onion1/4 cup fresh pomegranate seeds1/4 cup fresh pecan nuts4 large handfuls of fresh rocket
- Slice, dice and chop all the ingredients except the rocket and toss in a salad bowl. Lay the rocket onto the plate as spoon over the slimming chickpea salad mix.
- Mix 4 Tbsp olive oil, 6 Tbsp fresh lemon juice (or apple cider or balsamic vinegar ) salt and fresh black pepper for seasoning.
- Once it is mixed well, drizzle the dressing over the salad. TIP: Only add the dressing just before you eat it, especially if you made enough for next days lunch. Adding the dressing too soon will make the salad go soggy, not appealing at all.
So there you have it! The perfect slimming chickpea salad to help you and your tummy feel light, flat and confident this summer!
